These fluffy carrot rolls are not only a delicious and healthy alternative to traditional baked goods, but they're also quick and easy to prepare. Thanks to the combination of buckwheat flour, fresh carrots, and a pinch of spices, they're rich in nutrients, easy to digest, and filling.

Effect on the three constitutional types (Sowa Rigpa / Tibetan Medicine)

  • Lung (Wind & Movement Type)
    These rolls help balance the often dry and cold lung element, as they are slightly moist and nourishing. The carrots have a warming and grounding effect, while chickpea flour provides a good source of plant-based protein.

  • Tripa (Fire & Digestive Type)
    For tripa types, the spiciness of the paprika powder should be carefully measured – sweet paprika or a pinch of turmeric would be a mild alternative. The light, not too oily pastry has a balancing effect and doesn't strain the digestive system.

  • Beken (Earth & Water type)
    Those with a gluten-free diet will benefit from the light, airy texture of the rolls and the invigorating effect of apple cider vinegar, which stimulates the often sluggish digestion. A dash of ginger or a hint of black pepper could make the recipe even more invigorating.

Ingredients for one serving

  • 2 medium-sized carrots
  • 2 eggs from happy chickens
  • 2 tbsp buckwheat flour
  • 1 tsp baking powder
  • 1 tsp hot or sweet paprika powder (optional 1 ml jamu:MAGIC)
  • 1 pinch of salt
  • 1 tbsp apple cider vinegar

Filling:

Top with cottage cheese, cream cheese with herbs, or hummus, as desired.

Here's how it's done:

  1. Prepare carrots:
    Grate the carrots finely and place them in a clean kitchen towel.

  2. Make dough:
    Mix the eggs with the grated carrots to form a batter. Add the buckwheat flour, baking powder, paprika powder or jamu:MAGIC, and salt and mix well.

  3. Add apple cider vinegar:
    Add the apple cider vinegar and stir briefly – it reacts with the baking powder and provides extra fluffiness.

  4. Bake:
    Spread the batter in a pan and fry until golden brown on both sides. Spread with the filling while still warm, roll up and cut into pieces.

  5. Enjoy:
    Enjoy with cream cheese, hummus, or curd cheese. Perfect as a hearty breakfast or healthy snack!
