Ingredients for one serving
- 2 medium-sized carrots
- 2 eggs from happy chickens
- 2 tbsp buckwheat flour
- 1 tsp baking powder
- 1 tsp hot or sweet paprika powder (optional 1 ml jamu:MAGIC)
- 1 pinch of salt
- 1 tbsp apple cider vinegar

Top with cottage cheese, cream cheese with herbs, or hummus, as desired.
Here's how it's done:

Prepare carrots:
Grate the carrots finely and place them in a clean kitchen towel. -
Make dough:
Mix the eggs with the grated carrots to form a batter. Add the buckwheat flour, baking powder, paprika powder or jamu:MAGIC, and salt and mix well. -
Add apple cider vinegar:
Add the apple cider vinegar and stir briefly – it reacts with the baking powder and provides extra fluffiness. -
Bake:
Spread the batter in a pan and fry until golden brown on both sides. Spread with the filling while still warm, roll up and cut into pieces. -
Enjoy:
