Ingredients
  - 1 liter of vegetable broth
 - 1 onion, finely chopped
 - 2 garlic cloves, finely chopped
 - 2 potatoes, peeled and diced
 - 1 cup peas (fresh or frozen)
 - 1 small teaspoon green mint powder
 - 1 cup cream or plant-based cream alternative
 - salt and pepper to taste
 - 2 tablespoons olive oil or butter
 - Optional: croutons or toasted bread to serve
 
Here's how it's done:

Heat oil or butter in a pan. Sauté onions and garlic until soft.
 - Add diced potatoes and fry briefly.
 - Pour in vegetable stock and cook until potatoes are soft.
 - Add peas and cook until soft.
 - Puree the soup until smooth.
 - Add chopped mint or mint powder, season with salt and pepper.
 - Add cream and heat the soup, but do not let it boil.
 - Serve hot, garnished with mint leaves and optionally with croutons or toasted bread.
 
Tip: Our organic green mint is very intense, you only need very small amounts, it is best to test with a very small amount and increase the dosage according to taste.
